TASTING NOTES
2021 vintage develops a rich bouquet of iodines, limestones and flint aromas. In the palate, this chablis is both rich and sharp like steel, showing heady notes of yellow apples, banana and kiwi.
PAIRING
Oysters are often the perfect pairing with Chablis and for good reason. The soil in Chablis is composed of Kimmeridgian chalk that is actually laced with oyster shells. Since the wine less oaked, you get a racy, fresh, minerally complex palate that screams for shellfish.
VINEYARDS
The harvest is done in six different parcels divided on the hillside inside the Côté de Lechet 1er Cru area. The fermentation and aging are carried separately in oak barrels and stainless steel tanks. A final blending between the two is made afterwards, to obtain complexity and balance.
